Indegredients:

To make 500g of Rossogolla, you will need the following ingredients:

- 1 liter of full-fat milk

- 2-3 tablespoons of lemon juice or white vinegar

- 1 cup of sugar

- Water

- 2 pieces cardamon 



Instructions:

1. Boil the milk in a heavy-bottomed pan.

2. Once the milk comes to a boil, reduce the heat and add lemon juice or white vinegar slowly while stirring the milk.

3. The milk will curdle, and the whey (greenish water) will separate from the milk solids (chena).

4. Turn off the heat and let it sit for a few minutes.

5. Strain the mixture through a muslin cloth or a fine sieve. Rinse the chena under cold water to remove the lemony taste.

6. Squeeze the cloth to remove excess water and hang the chena for about 30 minutes to drain excess water.

7. After 30 minutes, knead the chena until it becomes smooth and soft.

8. Divide the chena into small portions and roll them into smooth balls without any cracks.(can add cake flour or maida).

9. In a separate pot, mix 1 cup of sugar with water and bring it to a boil to make a sugar syrup. Add pieces of cardamon into it.

10. Gently drop the chena balls into the boiling sugar syrup.

11. Cover and cook for about 15-20 minutes on medium heat until the Rossogollas double in size.

12. Let them cool down and refrigerate before serving.
